These Easy Parmesan Breakfast Potatoes make a great addition to your morning breakfast. Perfectly seasoned and cooked up in a cast-iron skillet with peppers and onions, these parmesan potatoes are the perfect companion with eggs and any of your favorite breakfast meats.

Saturday mornings around my house are the one day of the week when we like to cook a big breakfast and enjoy some family time. One of the things which I can always count on being requested is hash browns, potato hash or potato recipes of some sort. Everyone loves them and they are SO good served alongside just about anything!

But these parmesan potatoes aren’t just for breakfast; they’re great to fix for any meal! You’ll want to keep this recipe in regular rotation when meal planning because they are always a family favorite, and they are ready in 30 minutes or less!

One of the things you’ll love most about this amazing recipe is leftovers are awesome warmed up and served as part of a lunch or dinner meal as a savory side dish. What’s Needed to Make this Breakfast Potatoes Recipe:

  • 3 large baking potatoes, diced
  • 1 T. water
  • 1 T. extra virgin olive oil
  • 1 medium red bell pepper, diced
  • ½ medium red onion, diced
  • ½ t. garlic powder
  • ½ t. dried parsley
  • ½ t. dried rosemary
  • ½ t. smoked paprika
  • Sea salt and black pepper, to taste
  • ¼ c. Parmesan cheese, freshly grated

How to Make the Best Breakfast Potatoes:

  1. Place potatoes and water into a large microwave-safe bowl and cover. Microwave on high for 3-4 minutes, or just until potatoes are crisp tender, but not mushy. Do not over cook.
  2. Meanwhile, heat olive oil in a large cast-iron skillet over medium heat. Add red pepper and onion and sprinkle with garlic powder, parsley, rosemary, and smoked paprika. Season with salt and black pepper, to taste, and stir to combine.
  3. Cook, stirring frequently, until the pepper and onion soften and develop a bit of color, approximately 3-4 minutes.
  4. Drain potatoes from excess moisture and pat dry with paper towels. Transfer to the skillet and season with additional salt and black pepper, as desired. Cook, stirring occasionally, until the potatoes are golden brown and have a slightly crispy edge, approximately 6-7 minutes. Season with additional salt and black pepper, if desired.
  5. Remove from heat and sprinkle freshly grated Parmesan cheese on top of the warm potatoes. Cover just until the cheese melts and serve immediately. Enjoy! 

Store leftover in an airtight container in the fridge for up to a week.

Can I Freeze Parmesan Roasted Breakfast Potatoes?

Yes, and you should! They are awesome for meal prep! If you have a food saver, you can vacuum seal them before freezing, Or, you can just place them in a freezer safe bag and squeeze out as much air as you can. They will keep well in the freezer for up to 3-4 months.

How to Oven Roast Potatoes

You can certainly convert this recipe to parmesan roasted potatoes. Here are a few tips to make sure they turn out perfectly every time:

Start out by preheating your oven to 400 degrees. Line a large baking sheet with parchment paper then spritzed with non stick spray. Cut up the raw potatoes, peppers and onions in similar size pieces.

Place all the veggies in a large bowl and coat them with a little olive oil. Toss them with the seasonings. Transfer potatoes and vegetables to the prepared baking sheet and spread them out single layer. Roast the potatoes until they have a nice crisp edge but a tender and creamy center. Actual cook time depends on how big you cut the potatoes. Start checking them for doneness after about 15 minutes.

What Herbs Can I use with Breakfast Potatoes?

You can use many different combinations of herbs and spices. Chopped parsley always provides a nice fresh flavor to veggies and you can add a boost of nutrients with all of the health benefits of parsley. You can also use Italian seasoning, Mexican or Cajun spice blends. For an extra kick of heat, you can add a touch of red pepper flakes; the possibilities are endless.

What kind of Potatoes are Best for this Recipe?

If you are peeling the potatoes, russet potatoes, or Yukon gold potatoes work great. If you want to leave the skins on, then use small red potatoes or new potatoes because they have thinner skin that becomes tender when cooked.
